Apricot Chicken Rice or Pasta

Ingredients:

Chicken (Fresh or frozen straight to cook)
Tinned Apricots
Flour
Milk / Dairy Free Milk
Butter / Dairy Free Butter

Method:

In a pan boil the chicken in water
In another pan add a knob of butter (or dairy free alternative) and melt, add
flour and whisk until it becomes a smooth paste
Add milk (or dairy free alternative) and keep
whisking until it becomes a thick sauce
Add the tinned apricots with the
juice
Add the cooked chicken with
some chicken stock from
the pan if sauce is too think
Serve with pasta / rice or
potatoes and vegetables
of your choice
